Cretan Menus

These menus are a deep dive into the heart of Cretan culinary tradition. Based on age-old recipes, handmade delicacies, and locally sourced ingredients, they tell a story of mountains, villages, family tables, and timeless hospitality.

Starters:

  • Sfakian savoury pastry with cured pork (syglino) and herbs

Appetiser:

  • Grilled zucchini with barley rusk, sun-dried tomato and anthotyro cheese

Main:

  • Handmade lamb roll with wild oregano

Dessert:

  • Lemon cream with mastiha and almond biscuit

Starters:

  • Smoked syglino from Chania with fava purée, oregano and caper-ladolemono sauce

Salad:

  • Quinoa with tomato, cucumber, spearmint, Naxos graviera and orange-raki vinaigrette

Main:

  • Chicken fillet stuffed with staka and mizithra cheese in aromatic tomato sauce with vegetable couscous

Dessert:

Main:

  • Octopus sous vide with fava from Rethymno, caramelised onions, and tsounati olive oil

Dessert:

  • Sheep’s yogurt mousse with sour cherry spoon sweet and crunchy carob rusk base

  • Summer cheesecake with xinomyzithra, lemon cream, and crumbled carob rusk base
